Knead

When making bread, to fold the dough in half and then slowly punch it or push it flat repeatedly. It is best to do this on a floured surface and with buttered and/or floured hands.


Simmer

To cook just below the boiling point. This usually means that you were cooking at a higher temperature to start, brought the liquid to a boil, and then turned it down to med-low heat if using a lid, or medium heat if not using a lid. The liquid should be bubbling occasionally, but not violently.
