Brownies are one of the simplest desserts to make, especially if you’re making them for a party or potluck as they can be quickly cut into appropriate portions and they transport well. They also have the added bonus of making my apartment smell heavenly. If you like to make your brownies stretch, or you’re picky about appearances, I highly recommend acquiring a mini cupcake baking pan or silicone cups.
Ingredients:
- 1 cup sugar
- ½ cup butter/margarine
- 2 eggs
- 1 tsp vanilla
- ¼ tsp salt
- ¾ cup flour
- ⅓ cup cocoa
Directions:
Cream sugar and butter. Add eggs and vanilla, stirring well. Mix in sifted dry ingredients (make sure to sift cocoa!). Bake in a greased pan (9″x9″) at 350°F for 35 minutes. If making mini cupcakes, bake for 15-20min, and check with a toothpick or knife.
Possible additions: Add nuts in the batter or on top or a fudge frosting.

As an added bonus chocolate level, add chocolate chips to the batter before putting it in the pan to bake. Makes ‘em extra gooey and extra chocolatey.
This recipe is far simpler than the one on the Fry’s cocoa tin, which my son baked last night. This could be TOO easy. Thanks!
