In my opinion, stew is lacking something if you don’t add dumplings. They make for a very hearty meal. Perhaps surprisingly, they stay tasty even after refrigerating and reheating in a microwave (most bread goes terribly chewy). These dumplings are big and fluffy, tasting something like fresh tea biscuits.
Ingredients:
- 1½ cup all purpose flour
- 3 tsp baking powder
- ¾ tsp salt
- ¾ cup milk
- 3 tbs oil
Directions:
Sift flour, baking powder and salt into a mixing bowl. Combine milk and oil; add all at once to the dry ingredients, stirring just until moistened. Drop from tablespoon into top of boiling stew. Cover tightly. Let mixture return to boil and simmer covered for 15 min.
