Chocolate Soufflé

After learning how to make these, my sister immediately went out to purchase the ramekins required to make them for the family. It was well worth the effort. As someone who dislikes dishes, I’d recommend making them in a situation where a dishwasher is available.

Ingredients:

  • ½  cup + 2 tbsp sugar
  • ¾ cup milk
  • 3 tbsp flour
  • 4 eggs (separated)
  • 2 ounces bittersweet chocolate
  • ¼ cup cocoa powder
  • ¼ tsp cream of tartar
  • butter for lining dishes (or margarine)

Directions:

Preheat oven to 400°F,  butter only sides of ramekins. In medium bowl, whisk ¼ cup sugar, flour, and egg yolks. In saucepan, whisk ¼ cup sugar & the milk, bring to a boil, remove from heat. Slowly pour hot milk mixture into the yolk mixture, whisking constantly. Transfer back to saucepan, whisk over medium heat until mixture thickens (about 1 minute). Remove pastry cream from heat; add chocolate, whisk until melted; sift in cocoa powder, whisk until combined; transfer to large mixing bowl. Using electric mixer, whisk egg whites with cream of tartar until frothy, increase speed. When soft peaks form, add 2 tbsp sugar, until stiff peaks form. Fold egg whites into chocolate mixture. Transfer to ramekins. Bake until the top starts “cracking”, about 12 minutes (400°F).
